Fries are one of the hardest foods to deliver because they change quickly after leaving the fryer. The same heat that keeps them warm can create steam, and steam is what makes crisp fries soften.
A restaurant has to manage cooking time, seasoning, packing, and dispatch speed to give fries the best chance of arriving in good condition.
Fresh fries release moisture immediately after frying. If that moisture stays trapped inside a tightly sealed container, it condenses and softens the exterior.
Vented packaging helps release excess steam, but it must still preserve enough heat so the fries do not arrive cold.
Eat fries soon after the delivery arrives for the best result. If they soften slightly, spread them in a dry pan or air fryer for a few minutes rather than microwaving them.
Microwaves warm fries quickly, but they usually make the outside softer instead of restoring crunch.
